Cabernet Franc “Selezioni” DOC Venezia

GRAPE VARIETY:: Cabernet Franc 100%.

ORIGIN: Pramaggiore, our own vineyards.

SOIL TYPE: Medium texture, clayey.

VINIFICATION: The grapes are harvested by hand during the first ten days of October. Maceration takes place on the skins at a temperature of 28 °C for approximately 10-12 days in an innovative fermenter called “Ganimede”, the main feature of which is an ability to accumulate the carbon dioxide developed during the must fermentation process. When appropriately released this will help to achieve optimum, homogeneous racking of the marc without mechanical aids. At the end of the fermentation process the wine is placed in 700 litre French oak barrels, where it will mature until bottled.

COLOR: The colour is bright red, acquiring garnet highlights with age.

SCENT: Intense vinous scent with a typical herbaceous flavour when young, over time it takes on hints of oriental spices and cinnamon.

FLAVOUR: Elegant, well-balanced and complex on the nose and palate, its structure and tannins add rich personality and a fresh, tonic long aromatic end.

SERVING SUGGESTIONS: A very elegant red wine with complex nose and flavour, it goes well with poultry, venison, roast meat and hard cheeses.
